BANANA WHEAT MUFFINS 
1 1/3 c. flour
2/3 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 c. mayonnaise (reduced fat may not be used)
3/4 c. sugar
1 c. mashed ripe bananas (2 medium)

In a bowl combine the flours, soda and salt. In another bowl combine the mayonnaise, sugar, bananas (can add 1/2 c. chopped walnuts). Stir into the dry ingredients just until moistened. Fill greased muffins cups 2/3 full.

Bake 350°F for 20-25 minutes or until toothpick comes out clean. Cool for 5 or 10 minutes before removing from pans to wire racks.

Makes 12 large muffins.
