BANANA BREAD 
3 c. sifted all-purpose flour
3/4 c. sugar
1 tsp. salt
2 tsp. double action baking powder
1 tsp. baking soda
1 1/4 c. slightly under-ripe mashed bananas
1 egg
1 egg yolk
1/2 c. sour milk or buttermilk
1/3 c. shortening, melted
1 tsp. grated lemon peel
Pan-Coat

Sift together flour, sugar, salt, baking powder and baking soda. Add remaining ingredients except Pan-Coat; mix thoroughly. Pour in 9 x 5 x 2 3/4 inch loaf pan coated with Pan-Coat. Let stand 20 minutes. Bake in 325 degree oven for 1 hour.
