FRENCH APPLE PIE 
Unbaked pastry shell
6 tart apples
1/2 to 2/3 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. flour
1/2 c. shortening
1/2 c. brown sugar, tightly packed
1 c. flour, sifted

Prepare pastry, place peeled and sliced apples in a bowl, mix with the sugar, spices and 2 tablespoons of flour. Place this in the pastry shell. If apples are not very juicy, sprinkle with a bit of water. Now work together the butter, brown sugar and cup of flour into a sort of streusel mixture and sprinkle over the top of the apples.

Bake at 450 degrees for 15 minutes, reduce heat to 350 degrees and bake 20 to 30 minutes longer. Watch carefully that top mixture does not brown too darkly. Serve warm.
