PEACH PIE 
1 env. unflavored gelatin
1/4 c. water
1 (12 oz.) can diet ginger ale
2 c. sliced fresh ripe peaches or frozen
1 pie shell, baked
Sugar free whip topping

Sprinkle gelatin over water in a small mixing bowl. Place bowl in a pan of hot water. Heat until dissolved. Add ginger ale. Stir, add peaches and chill until thickened. Spoon into cooked pie shell and chill until firm; add topping.

NOTE: Sugar substitute may be needed if peaches are a little tart - a nice change.

A small package of orange or raspberry sugar free Jello and 1 3/4 cups water may be used with peaches. When using Jello try different Jello with the peaches you can have fun with this one. Omit the unflavored gelatin if making a change.
