CHOCOLATE CREAM PIE 
1 9" baked, cooled pie shell
1 1/2 c. sugar
3 tbsp. cornstarch
1/2 tsp. salt
3 c. milk
3 beaten egg yolk
1 tbsp. butter
1 1/2 tsp. vanilla extract
3 oz. unsweetened chocolate
Whipped cream

In a pot combine sugar, cornstarch and salt. Gradually stir in milk. Cut up chocolate; add to mixture. Cook slowly, stirring constantly, until mixture thickens and boils. Boil for 1 minute. Remove from heat.

Place egg yolks in a bowl. Stir in 1/2 sugar mixture. Stir egg mixture into sugar in pot. Boil stirring constantly, for 1 minute longer. Remove from heat. Stir in vanilla and butter. Pour immediately into pie shell. Chill thoroughly. Top with whipped cream. Yields one 9 inch pie.
