ASPARAGUS VINAIGRETTE 
1 lb. cottage cheese
1 1/2 lb. asparagus, canned
1/2 tsp. basil
Finely chopped green onions
1/4 c. olive oil
1 1/2 tbsp. wine vinegar
3/4 tsp. salt (1/2 tsp. in sauce)
1/4 tsp. pepper
Pimentos (sm. jar)

SAUCE:

Add basil, oil, vinegar, salt, and pepper together. Lay drained asparagus in dish, spoon sauce over it. Leave at room temperature at least 30 minutes.

Mix pimentos, scallions, and cottage cheese together; place around asparagus. This dish tastes best when it is prepared the day before. Keep asparagus mixture separate from cottage cheese mixture and chill over night; then add cottage cheese around asparagus when ready to serve.
