SPROUTS AND CORN | |
Servings: Makes 2 to 4. Preparation time: About 10 minutes. Cooking time: About 3 minutes. 2 ears corn Salt 1 pt. brussels sprouts 1 tbsp. butter Place cooking rack in 4 or 6 quart pressure cooker. Add 1 cup water. Husk and wash corn. On square of aluminum foil, place corn; sprinkle with salt to taste. Fold up corners of foil to form packet. Place on rack on pressure cooker. Wash brussels sprouts; trim stems and discard any discolored outer leaves. In center of another square of foil, place the brussels sprouts. Sprinkle with salt to taste; dot with butter. Fold up corners of foil to form packet. Place in pressure cooker over corn. Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook at 15 pounds pressure 3 minutes. Cool pressure cooker naturally for 5 minutes; then quick cool. Do not attempt to remove cover until pressure is completely reduced. Carefully open foil packets; place corn and sprouts in separate serving dishes. |
