PANCAKES 
3 c. unsifted flour
3 tsp. baking powder
2 tsp. sugar
1 tsp. salt
1 3/4 c. skim milk
1/2 c. egg substitute
1/4 c. vegetable oil
butter
Lite pancake syrup

In a mixing bowl blend together flour, baking powder, sugar and salt. (Combine milk, egg substitute and oil.) Add to dry ingredients. Beat with rotary beater just until mixture is well blended and only a few small lumps remain. For each pancake pour 1/4 cup batter into hot lightly oiled griddle. Bake until pancakes are bubbly and edges look dry. Turn and bake until brown on underside. Serve with butter and syrup. 4 servings.
