SALAD:

6 med. potatoes
2 hard boiled eggs
1 med. onion, diced
1 c. celery, diced
1 1/2 tsp. salt
parsley for garnish

DRESSING:

3 eggs, beaten
1/2 c. sugar
1/2 tsp. mustard
1/4 c. vinegar
2 tbsp. dill pickle relish

Combine eggs with remaining dressing ingredients in saucepan. Bring to a boil, stirring constantly until thick. Remove from heat, cool, add to salad ingredients and toss gently.
