CHICKEN TACO RICE 
1 lb. boned chicken breasts, cut into strips
2 tbsp. oil
1 (13 3/4 oz.) cans chicken broth
1 (8 oz.) can tomato sauce
1 pkg. taco seasoning mix
1 (12 oz.) can corn, drained
1 med. red or green pepper, cut into strips
1 1/2 c. cooked rice
1/2 c. shredded Cheddar cheese
Tortilla chips - sour cream

Cook and stir chicken in hot oil until lightly browned. Add broth, tomato sauce and seasoning mix. Bring to boil. Reduce heat, cover and simmer 5 minutes. Add corn and pepper. Bring to a boil. Stir in rice. Cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Serve with cheese, tortilla chips and sour cream. Makes 4 servings.
