THREE WEEK CANDY | |
This candy is an excellent choice for packing up and sending overseas. It will be 3 weeks before the candy has ripened and is ready to eat. 6 cups sugar 2 cups light corn syrup 1 (12 oz.) can plus 1 (5 oz.) can Carnation evaporated milk 1/2 cup (1 stick) butter 2 tsp. vanilla 1 cup nuts, chopped (optional) Combine sugar, corn syrup and milk. Cook over low heat until mixture forms a ball when dropped into cold water (234-238°F on a candy thermometer). Add butter and vanilla. Beat well using an electric mixer until mixture begins to lose its gloss. Finally, add nuts and stir (if using). Pour into a deep pan and allow to cool. Remove from pan and wrap in wax paper. Makes about 6 pounds of candy. Note: There is a difference between Sweetened Condensed Milk and Evaporated Milk. This recipe calls for unsweetened Carnation Evaporated Milk. |
