ENCHILADAS 
3 lbs. ground beef
2 lg. onions, diced
3 or 4 garlic cloves or garlic salt (equal amount)
1 tbsp. chili powder
1 tbsp. hot sauce
1 lg. can tomato sauce
1/2 tsp. sugar
Salt & pepper to taste
1 lb. sharp cheese, grated
2 dozen frozen tortillas

Fry meat and garlic. Add chili powder, tomato sauce, hot sauce, sugar and salt and pepper. Simmer until time to roll tortillas.

GRAVY:

4-6 tbsp. salad oil
1 tbsp. chili powder
4 tbsp. flour or enough to make paste

Mix on heat, then add water, enough to make a mixture which is medium thick. cook until thickens. Dip tortillas in gravy. Fill with small amount of meat mixture. Sprinkle with cheese and onion. Now roll and place in greased baking pan. Pour remaining gravy over enchiladas and sprinkle with cheese. Bake at 375 degrees until cheese is melted.
