SWEET PICKLE RELISH 
4 c. finely chopped cucumbers
2 c. finely chopped onions
1 c. finely chopped green pepper
1 c. finely chopped sweet red pepper
1/4 c. salt
2 c. cider vinegar
3 1/2 c. sugar
1 tbsp. celery seeds
1 tbsp. mustard seeds

In large bowl, mix vegetables with salt. Add just enough cold water to cover. Stand for 2 hours - drain in several batches pressing down to force out excess water.

In large pot, heat vinegar, sugar and spices to the boiling point and stir until sugar dissolves. Add strained vegetables and simmer for 10 minutes. Pack in jars leaving 1/4 inch head space. Process for 10 minutes in boiling water bath. Store for 4 weeks before using. Makes about 4 pints.
