SPANISH RICE 
1 lb. pork sausage
2 pkg. green onions, chopped fine
2 ribs celery, chopped
2 c. raw rice
1 lg. clove garlic, minced
1 lg. can diced tomatoes
1 (16 oz.) can tomato sauce
Salt and pepper to taste
1/2 c. dry white wine

Fry sausage until lightly browned. Drain. Add rice and brown. Add onions, celery and garlic, cook until tender. Add tomatoes, tomato sauce, salt and pepper. Simmer 1 hour.

After 1/2 hour, add white wine.
