TAMALE PIE 
1 (8 1/2 oz.) pkg. corn muffin mix
1 (4 oz.) can diced green chili peppers, drained
1 (8 oz.) can red kidney beans, drained
1 (4 oz.) pkg. shredded cheddar cheese (1 c.)
1 lb. ground beef
1 (11 oz.) can enchilada sauce

Prepare muffin mix according to directions on package. Stir in 1/2 cup cheese and the chili peppers. Spread batter into a greased 12 x 7 x 2 inch baking dish. Bake at 375 degrees for 10 to 12 minutes.

Meanwhile, brown ground beef; drain fat. Stir in enchilada sauce and beans. Spread over the muffin mixture. Return pan to oven and bake 7 more minutes. Sprinkle with remaining cheese. Bake until cheese melts. Serve with sour cream.
