SOUTHERN CORN PUDDING 
2 c. fresh corn, cut from cob
2 tsp. sugar
1 1/2 tsp. salt
1/8 tsp. ground black pepper
3 eggs, lightly beaten
2 tbsp. butter
2 c. milk

Preheat oven to 350 degrees. Combine corn, sugar, salt and pepper. Add eggs; mix well. Add butter to milk; heat until butter is melted. Blend with corn and egg mixture. Turn into buttered 1 quart casserole. Place in pan of hot water. Bake for 1hour or until knife inserted in center comes out clean. Garnish with fresh parsley. Yield: 6 servings.
