DAY-AFTER-THANKSGIVING SALAD 
1 lb. cold cooked turkey
4 stalks celery, sliced
4 scallions, chopped
1/2 c. chopped nuts
1/2 red or green pepper, chopped finely
1/2 c. mayonnaise
1 tbsp. lemon juice
Salt and pepper

Dice the turkey into bite size pieces. Combine with the celery, scallions, nuts, and pepper. Blend the mayonnaise and lemon juice. Season to taste with salt and pepper. Add the mayonnaise to the turkey mixture and mix thoroughly. Serves 4.
