CARAMEL POPCORN 
4 qts. freshly popped corn
1 c. firmly packed brown sugar
1/2 c. butter
1/2 c. light or dark corn syrup
1/2 tsp. salt
1/2 tsp. vanilla
1/2 tsp. baking soda
Peanuts, if desired

Spread popcorn in a large size roasting pan. In a heavy saucepan stir sugar, syrup, butter, and salt. Cook until mixture boils, stirring constantly. Continue cooking without stirring, 5 minutes. Remove from heat. Stir in vanilla and baking soda. Pour syrup over popcorn. Stir to coat well.
