HERBED BREAST OF CHICKEN 
1 med. onion
4 whole cloves
4 whole chicken breasts, sinned
2 to 3 tsp. minced fresh lemon thyme or thyme
1/2 to 1 tsp. minced fresh rosemary, sage or tarragon
2 to 3 tsp. minced fresh marjoram
1 tsp. low-sodium seasoning
1/2 tsp. grated ginger root
Pepper (optional)
4 lg. mushrooms, sliced
1/3 c. dry white wine
Parsley

Cut 4 small slits in onion, and insert a clove into each slit. Set aside.

Place chicken, meaty side up, on a large piece of foil. Sprinkle chicken with herbs, low-sodium seasoning, ginger root, and pepper; top with mushrooms and onion. Add wine, fold foil to seal securely.

Bake at 350 degrees for 1 hour or until done; open foil during last 10 minutes of baking to allow browning. Cut the onion into wedges for serving. Yield: 4 servings.
