GUMDROP CAKE 
1/2 c. butter
1 c. sugar
1 tsp. vanilla
1 egg
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. nutmeg
3/4 lb. gumdrops (no black)
1/2 c. flour
1 c. raisins
1/2 c. nuts (walnuts or pecans)
3/4 c. unsweetened applesauce
1/2 c. hot water

Dredge gumdrops (cut up if large), raisins, and nuts in 1/2 cup flour. Set aside. Cream butter, sugar, and vanilla until fluffy. Add egg and beat well. Add applesauce and hot water, mix well and then add dry ingredients and mix. Fold in gumdrop mixture. Line 9 x 5 pan with wax paper. Grease well and pour in mixture. Bake at 275 degrees for 45 minutes and then at 300 degrees for 75 minutes. Allow to sit several hours or preferably overnight before cutting or will crumble.
