TEXAS ORANGE MUFFINS 
1 c. butter (or 1/2 butter & 1/2 Crisco)
1 c. sugar
2 eggs
1 tsp.b baking soda
1 c. buttermilk
2 c. sifted flour
1 c. white raisins
Rind of 2 oranges, grated

TOPPING:

Juice of 2 oranges
1 c. brown sugar

Cream butter and sugar. Add 1 egg at a time and beat well. Dissolve soda in buttermilk and add alternately with flour. Add raisins and grated rind of oranges. Fill greased muffin tins 2/3 full. Bake at 400 degrees about 20 to 25 minutes.

TOPPING: Mix orange juice with brown sugar and bring to boil. Pour over the muffins. Remove from pan. Yield: 12 muffins.
