EGG FOO YONG 
6 eggs
1 c. drained bean sprouts
1/2 c. onion, diced
1/2 tsp. hot pepper sauce
2 tbsp. salad oil
Salt and pepper to taste

Add pepper sauce to eggs and beat with a fork; stir in bean sprouts and onion. Heat oil in skillet; add 1/4 cup of mixture and cook until lightly browned. Turn and brown on other side. Serve with sweet and sour sauce and hot cooked rice.

Variation: Add your favorite cooked meat or poultry to mixture before frying.
