RICE PUDDING (NO BAKE) 
1 c. rice
1 c. water
2 qts. milk
Pinch salt
1 pkg. vanilla pudding (not instant)
1 egg
2 tsp. vanilla
2/3 c. sugar

Cook rice in water until it evaporates. Add milk and salt. Cook over low flame 45 minutes. Remove from heat. Beat egg and pudding together. Add this mixture slowly while stirring to rice. Add vanilla and sugar, cook until thick. Sprinkle with nutmeg or cinnamon.
