PEAR GINGER 
2 lbs. pears, under ripe
2 oz. candied crystalized
1 lemon, quartered & seeded
1 lb. sugar
1/2 c. water

Cut pear in small pieces, put ingredients in blender. Blend until smooth. Put into saucepan and add sugar and water and cook 3 hours until thick. Stir with wooden spoon frequently. Yield: 2 pints.
