Peel and slice 6 cups pears. Cover with 5 cups sugar and let set overnight (to draw out juice). Next morning, bring to a boil, then reduce heat. Simmer slowly until syrup is dark and thick. Seal in sterilized jars (do not add water). For ginger pear chips add 1 teaspoon ginger during cooking. |
