FLAKY PIE CRUST 
8-INCH:

1 1/2 c. all-purpose flour
2/3 c. shortening
1/2 tsp. salt
4-5 tbsp. ice water

9-INCH:

2 c. all-purpose flour
1 c. shortening
1 tsp. salt
5-7 tbsp. ice water

Sift together flour and salt. Cut in shortening with pastry blender or two knives until pieces are the size of small peas. Break apart pieces using fingers (this is important).

Sprinkle ice water 1 tablespoon at a time over flour-shortening mixture. Gently toss with a fork until all is moistened. Gather up with fingers; form into a ball. On a lightly floured surface, flatten ball slightly and roll 1/8-inch thick.
