ZUCCHINI "APPLE" PIE 
1 1/2 lb. med. zucchini, peeled and cut into thin 1/4 inch strips (4 c.)
1 c. sugar
1/2 c. packed light brown sugar
1/4 c. all - purpose flour
3 tbsp. butter
2 tbsp. cider vinegar
2 tbsp. water
1 tsp. lemon juice
1/2 tsp. each ground cinnamon and nutmeg
1 baked 9 inch pie shell

Put all ingredients into 2 quart microwave - safe bowl. Stir to mix. Microwave uncovered on High 8 to 10 minutes, stirring 3 times until thickened. Pour into baked pie shell.

TOPPING:

1/2 c. butter
1/2 c. light brown sugar
1 c. all - purpose flour

Melt butter in 1 quart microwave bowl. Stir remaining ingredients until blended. Cover and microwave on high 2 to 2 1/2 minutes, stirring 2 times. Spread out on foil. When cool, sprinkle on pie. Chill in refrigerator at least 3 hours.

Since microwave ovens vary in power, you may need to adjust your cooking time.
