CHINESE FRIED RICE | |
1 1/2 c. rice 3 eggs 1/8 tsp. salt 5 slices bacon, cooked and crumbled, reserving 1 1/2 tbsp. bacon drippings 1 1/2 tsp. soy sauce 1 tbsp. chopped green onion Prepare rice as directed. In bowl, lightly beat eggs and salt with fork. In 12 inch skillet over high heat, heat reserved bacon drippings until very hot. Pour in egg mixture; cook, stirring quickly and constantly, until eggs are the size of peas and leave side of pan. Reduce to low heat. |
