FRESH PEACH COBBLER | |
1/2 c. sugar 1 tbsp. cornstarch 4 c. fresh peaches 1 tsp. lemon juice 1 c. flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3 tbsp. shortening (Butter Crisco) 1/2 c. milk Blend sugar and cornstarch in saucepan. Stir in peaches and lemon juice; cook about 1 minute. Pour mixture into 2 quart casserole. Stir together flour, 1 tablespoon sugar, baking powder and salt. Add shortening, blend until crumbs form add milk. Mix until dough forms a ball. Drop by spoonfuls onto hot fruit. Bake at 375 degrees for 25-30 minutes. Also good with frozen peaches or apples. Serve with ice cream. |
