JALAPENO SAUCE 
2 c. seeded peppers
1 1/2 c. chopped onions
3/4 c. white vinegar
7 c. tomato sauce
3 c. tomatoes
3 to 4 garlic cloves, minced
2 tbsp. sugar
1 tbsp. salt, oregano
1 tsp. pepper, basil

Put peppers, onions in non-aluminum pan. Add vinegar, simmer partly covered until soft. Add remaining ingredients, simmer 40 minutes until thick. Pack in jars leaving 1 inch head space. Process in boiling water bath 10 minutes.
