RAW BROCCOLI SALAD 
3 c. raw bite-sized pieces broccoli spears
1/2 c. low fat yogurt
1/2 tsp. freshly ground pepper
2 oz. cheddar cheese, shredded
1 lg. carrot, cut in thin slices

Mix broccoli with yogurt, salt, and pepper. Spoon mixture on 4 salad plates; sprinkle tops of salads with cheese. Arrange carrot slices around salads. Yield 4 servings.
