JANICE'S PILAF | |
2 cups rice 3 cups chicken or vegetable stock 2 cups pumpkin or zucchini or broccoli 4 chicken fillets (thighs have more flavour) 1/2 a diced onion Bring the stock to the boil with all of the ingredients except the rice. When boiling add the rice, cover with a lid and lower the heat to the lowest setting. Simmer for 20-25 minutes, or until rice is cooked through. Do not remove lid unless checking if the rice is cooked. This is a quick one pot recipe, that feeds a family of four and is good with parmesan cheese sprinkled on top.
