PINTO BEAN PIE 
1 c. sour cream
3 eggs, beaten
1 c. sugar
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt
3/4 c. mashed pinto beans
1/4 c. pecans, chopped
1 unbaked pie shell

Combine the first 6 ingredients. Stir in pinto beans and nuts. Pour into unbaked pie shell. Preheat oven to 425 degrees and bake pie for 35 to 40 minutes. Cool and serve plain or with whipped cream or vanilla ice cream.
