6-8 sweet potatoes 1 stick butter 1 1/2 c. light brown sugar 1 tsp. nutmeg Juice of 1/2 lemon 1/2 c. water Dash salt Parboil potatoes in large kettle for 15 to 20 minutes. Cool and peel. Cut into chunks. Place in large baking dish. Mix the sugar, nutmeg, lemon juice and salt in the water and pour over the potatoes. Put pats of butter over the top. Bake in a 400 degree oven for 1 hour, basting frequently. Reduce heat after 30 minutes to prevent burning. |
