RICE PUDDING SALAD 
3 c. cooked rice (1 c. uncooked)
2 pkgs. instant vanilla pudding
1/2 tsp. cinnamon
1 1/4 c. milk
1 1/4 c. vanilla ice cream
1/2 c. raisins, cooled
2 c. Cool Whip

Microwave raisins in 1 cup water for one minute. Then drain. Cook rice, rinse and drain very well. Mix pudding with milk, ice cream and cinnamon for 1 minute in large bowl. Add raisins and rice. Fold in Cool Whip. Serves 10 to 12.

Since microwave ovens vary in power, you may need to adjust your cooking time.
