LEEK AND TASSO RICE 
1 stick butter
1 bunch leeks, cleaned & sliced
1 lb. Tasso, diced in sm. pieces
1 can chicken broth
1 can cream of celery soup
1 tsp. Cajun seasoning
1/2 tsp. J.D.'s Magic
8 oz. mushrooms, sliced
1 tsp. Kitchen bouquet
1 (8 oz.) whipping cream
1/2 tsp. white pepper
1/4 c. fresh parsley, chopped
5 c. Minute rice (cooked)

In large Dutch oven, melt butter over medium heat. Add leeks and mushrooms and saute for 2 minutes. Add Tasso, chicken broth, soup, Cajun seasoning, J.D.'s Magic, kitchen bouquet and cook for 15 minutes. Add whipping cream, pepper, parsley and rice. Cover and simmer for 15 to 20 minutes on low-medium heat.
