FRIED OYSTERS 
Oysters
Flour (for coating)
Bread crumbs (fine)
Oil (peanut, olive, soy, canola, corn - your choice)
Salt shaker
Very cold water (iced maybe?)

Rinse oysters and drain. Then slice through horizontally. This is kind of hard. They are wiggly and soft, so use a sharp knife. (Pacific oysters are big things.) Dip in flour, coating all of them and lay on something big enough to hold them. Then dip floured oyster in dish of very cold water briefly. Shake off gently and roll in fine bread crumbs. (NOTE: Water will turn milky!) Pile on a platter and put in refrigerator until ready to fry (cover with plastic wrap). Then relax. The worst part is done. Fry in pan (not deep-fry), when done on one side turn and salt browned side and finish cooking.

NOTE: A delicious and superior fried oyster. I'd hate to cook these for 25 people!
