CHOCOLATE-MINT LAYER COOKIES 
2 oz. unsweetened chocolate
1/2 c. butter
2 eggs
1 c. sugar
3/4 c. flour
Mint Cream
Chocolate Glaze

MINT CREAM:

1 1/2 c. powdered sugar
3 tbsp. butter
2 tbsp. half & half
1 tsp. peppermint extract

CHOCOLATE GLAZE:

2 oz. bitter chocolate
2 tbsp. butter
5 tbsp. sugar
(Or 2 oz. sweet chocolate, 2 tbsp.butter)

Melt chocolate and butter together over hot water. In a bowl, beat together eggs and sugar; add flour and chocolate-butter mixture. Stir well until combined. Pour batter into a greased 9 x 9 inch pan. Bake at 350 degrees for 25 minutes. Cool in pan. Spread mint cream over cookie, cover and chill until firm. Cover with chocolate glaze.
