SCONES
2 c. flour
3 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
4 tbsp. butter
2 eggs, beaten (reserve 1 tbsp. egg white for brushing on top)
1/3 c. milk
2 tsp. sugar

In a bowl combine flour, baking powder, 2 tablespoons sugar and salt. Cut in butter with a pastry cutter until the mixture resembles fine crumbs. Combine eggs and milk. Stir into crumb mixture to make stiff dough.

Turn mixture onto a lightly floured board and knead lightly until dough sticks together. Divide dough into 2 parts. Roll each part out to make a circle about 6 inches in diameter and about 1 inch thick. With a knife cut each circle into quarters, making 4 even wedges. Arrange wedges on an ungreased baking sheet about 1 inch apart. Brush tops of scones with reserved egg white and sprinkle with 2 teaspoon of sugar. Bake in preheated 400 degree oven for 15 minutes.
