PORK CHOP, POTATO CASSEROLE (EA) 
Grease shallow casserole with pork fat. Wash, pare and slice about 1/8 inch slices of potatoes, arrange in casserole, sprinkle 2 tablespoons grated onion, place 4-6 medium thick pork chops on top, salt and pepper. Add milk to just about cover pork chops. Bake in oven, 325 degrees, for 50 minutes, covered. Remove lid and let brown for 10 minutes.
