EASY CHEESECAKE CUPS 
24 vanilla wafer cookies
2 pkg. (8 oz. each) cream cheese, softened
1/2 c. sugar
2 eggs
1/2 c. vanilla extract
1 c. peanut butter chips
1/2 c. semi-sweet chocolate chips
3 tbsp. butter

Heat oven to 350 degrees. Line muffin pans with foil-laminated paper bake cups (2 inches in diameter). Place 1 vanilla wafer in bottom of each cup. In large mixer bowl beat cream cheese and sugar. Add eggs and vanilla, beat well. Stir in peanut butter chips. Spoon 1 heaping tablespoon cheese mixture into each cup. Bake 15 minutes or just until set but not browned. Cool.

Melt chocolate chips and butter together either in microwave or in small pan on stove until mixture is smooth when stirred. Drop teaspoonfuls of chocolate mixture onto center of each cheesecake letting white show around edge. Cover. Chill.

Makes about 2 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
