THRIFTY TURKEY SOUP | |
1 turkey carcass 2 onions, chopped 6 stalks celery, chopped 6 carrots, chopped 2 chicken bouillon cubes 1 c. rice or 6 cubed potatoes Salt & pepper to taste Dash parsley In enough water to cover carcass boil carcass for 2 hours. Pick meat from bones. Strain broth and return broth and meat to pan. Add remaining ingredients. Simmer for 1 hour. For extra hearty soup, add any leftover mashed potatoes, stuffing and gravy to soup. |
