LIGHT 'N FRUITY PIE 
1 pkg. (3 oz.) strawberry Jello (can use diet)
2/3 c. boiling water
2 c. ice cubes
3 1/2 c. Cool Whip, thawed
1 c. strawberries, sliced or chopped
1 graham cracker pie crust

Dissolve Jello completely in boiling water, stirring about 3 minutes. Add ice cubes and stir constantly until gelatin is thickened, about 2 or 3 minutes. Remove any unmelted ice. Using wire whip, blend in whipped topping, then whip until smooth. Fold in strawberries and chill until mixture will mound. Spoon into pie crust. Chill 2 hours. Garnish with additional fruit if desired.
