CHICKEN SALAD CROISSANT 
2 boneless, skinless chicken breast halves
1/8 tsp. ground pepper
1/2 tsp. chopped cilantro
1/4 c. creamy Ranch style dressing
3/4 tsp. prepared mustard
2 tbsp. diced celery
1/4 c. chopped cucumbers
1/4 c. seeded chopped tomato
4 croissants, cut lengthwise in halves
2 tbsp. butter

Cook chicken breasts in microwave until done about 3 to 4 minutes. Refrigerate until cool enough to handle, about 10 minutes. Cut chicken into 1/4 inch pieces. Place chicken, pepper, cilantro, dressing, mustard, celery, cucumber and tomato in bowl and toss. Cover and refrigerate until chilled. Just before serving, spread cut sides of croissant halves with butter. Spread with chicken mixture and enjoy. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
