BIRD OF PARADISE 
3 eggs, beaten
3 tbsp. milk
1/2 tsp. salt
4 boned chicken breasts, skinned
1/2 c. grated Parmesan cheese
1/2 c. butter
1 c. sherry (not cooking sherry)

Beat eggs and milk together. Sprinkle salt over chicken. Dip chicken into egg mixture; roll in cheese. Melt butter in electric skillet at 300 degrees. Brown chicken on both sides. Add sherry. Cover and bake at 225 degrees for 45 minutes or until tender. Serve on wild rice. Yield: 4 servings.
