PEACH JAM 
2 qts. crushed, peeled peaches
1/2 c. water
6 c. sugar

Combine peaches and water. Cook gently for 10 minutes. Add sugar, slowly bringing to a boil, stirring occasionally, until sugar dissolves. Cook rapidly until thick, about 15 minutes, stirring frequently to prevent sticking. Pour hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process 15 minutes in boiling water bath. Yield: Approximately 4 pints.
