MEATLOAF 
2 to 2 1/2 lbs. ground chuck
1 lb. pork sausage (sage)
4 stalks celery leaves, 1 c. diced sm.
4 med. onions, 1 c. diced sm.
1-2 green peppers, 1 c. diced sm.
1 1/2 c. cracker crumbs
2 eggs, beaten
2 tsp. dry mustard
2 tsp. pepepr
1/4 c. catsup
1 to 1 1/2 tsp. salt
3 tbsp. Worcestershire sauce
1/2 c. milk

Mix first 6 ingredients together well. Combine remaining ingredients and mix with ground chuck mixture. Bake at 350 degrees for 45 minutes. Halfway through baking, drain off fat and add 1/4 cup catsup and 3 tablespoons Worcestershire sauce to top of loaves and bake an additional 15 minutes. Makes 2 loaves.
