CHOCOLATE - CHOCOLATE CHIP
MUFFINS
 
1 c. all-purpose flour
2/3 c. whole wheat flour
1 c. packed light brown sugar
1/4 c. baking cocoa
1 tsp. baking soda
1/4 tsp. salt
1/2 c. water
1/2 c. mashed ripe banana
1/3 c. vegetable oil
1 tsp. vinegar
1 tsp. vanilla extract
1/2 c. semi-sweet chocolate chips

Heat oven to 350 degrees. Place paper cupcake liners in muffin pan. In small bowl combine flour, sugar, baking soda and salt. Add water, banana, oil, vinegar and vanilla. Beat until smooth. Stir in chips (reserve a few for the top.) Pour into pan. Sprinkle a few chips on each muffin. Bake 25 minutes. Cool in pan 10 minutes, then remove to wire rack. Makes 1 dozen muffins.
