8 med. potatoes, about 2 1/2 lbs. slices 1/3 c. butter 1 1/4 tsp. salt 1/8 tsp. pepper Mash potatoes, pare and cut into extra thin slices. Heat butter in skillet. Add potato slices to skillet and sprinkle with salt and pepper. Cover and cook slowly without turning, 10 to 15 minutes, or until potatoes are golden brown and crisp. Turn potatoes with spatula. Continue to cook slowly, uncovered about 15 minutes longer or until second side is browned. |
