ROY'S LIMA BEANS | |
1 hand full dry limas per person 3 lean ham hocks or salt pork 5 scallions 1 bell pepper 1 can Italian style stewed tomatoes 1/2 yellow onion 1. Wash and cook lima. (i.e. cover them with water, with ham hocks and bring to a boil, turn off heat and let stand for 1 hour..DO NOT REMOVE THE LID!!!!!Then bring to a boil again, reduce heat and simmer until tender.) 2. When beans are tender, add the tomatoes, onions, bell peppers and simmer. 3. They're ready... The second day they are even better. Serve with home made cornbread. |
